Every month, the Akademi bar team explores one of Indonesia's local ingredients. This month’s master class will showcase Case Study #009: Chasteberry.
Chasteberry, known as legundi in Indonesian, was historically used as a libido suppressant. During the Middle Ages, the chasteberry’s supposed effect on sexual desire led to it becoming a food spice at monasteries, where it was called “monk’s pepper” or “cloister pepper”.
The chaste tree is a small shrub which can grow up to eight metres tall. It has purple/blue flowers and produces round fruits which turn black when mature. Antioxidant-rich chasteberries have various medicinal benefits, ranging from wound relief to easing sore throats and coughs to relieving hormonal imbalance in women.
Taking the lead in this Case Study is Akademi resident mixologist, Arta Swabawa, known as Bawa. Bawa, who has been involved in the cocktail industry for several years, loves nothing more than the buzz and bustle of a crowded bar.
With his passion to master all of the techniques and create new flavours in mixology, Bawa has set his ambitions high, aspiring to become the most influential mixologist in Bali.
